Crockpot French Onion Roast

Season the 1.5 lbs chuck roast generously with salt and pepper. Sear the seasoned chuck roast on each side for 2-3 minutes with olive oil in a pan. In the same pan, melt 1.5 tbsp butter and thinly slice 1 onion, then caramelize the onion for about 15 minutes. Add 2 cloves of garlic, 1 tbsp balsamic vinegar, and 1/3 cup dry white wine to the pan with the onions and simmer until the liquid is reduced. Transfer the seared meat and caramelized onions to a crockpot. Add 1/4 cup plus 2 tbsp of beef broth to the crockpot along with 1 bay leaf and 2 sprigs of thyme. Cook on low for 8-9 hours.
