Strawberry Shortcake Cake

For the cake: Combine 2 cups flour, 4 tsp baking powder, 1/2 tsp salt, 1 cup sugar, and 1 stick cold butter. Combine with hands until the mixture is grainy. Make a well in the center and add 1 cup milk and 1 tsp vanilla extract. Mix until just combined. Add the batter to a pan lined with parchment paper and sprayed with nonstick spray on the sides. Bake at 350°F (175°C) for 35-40 minutes.

For the homemade whipped cream: Combine 1 cup heavy cream and 1 tsp vanilla extract and whip until soft peaks form.

For the strawberries: Slice the strawberries and add a few tablespoons of sugar, mixing gently.

Cool the cake completely before adding the whipped cream and sweetened strawberries as toppings.
